We have found the most delicious new treat to use in our baking – Marshmallow Fluff.
It’s basically just spreadable fluffy marshmallow goo but it tastes delicious, and is really versatile – we’ve used it in cakes, hot chocolate, melted as an ice cream topping, on toast and actually, just eaten off the spoon straight out of the jar. It’s really sweet and a little bit really does go a long way.
Two tablespoons has 40 calories and no fat which isn’t bad considering how sweet it tastes and the jar itself cost us about £1.80 if I remember rightly.
On a Sunday night, I usually make packed lunch cake to be portioned up in the fridge for the kids packed lunches and tonight Master Frugal asked me to make it with Marshmallow Fluff so I adapted my usual recipe and made Chocolate Marshmallow Fluff cake. Seeing as lots of you on Twitter and Facebook asked me for the recipe, here it is….
150g butter or margarine
150g sugar
3 eggs
125g self raising flour
25g cocoa powder
A few drops of vanilla essence
A small packet of Maltesers (optional)
Marshmallow Fluff
Pre heat the oven to about 220 c
- Make up your sponge cake by creaming the sugar and the butter together, mixing in the eggs and vanilla essence and then finally, folding in the flour and the cocoa.
- When your sponge cake mix is done, add the packet of crushed Maltesers (if you’re using them) and then spoon into a greased baking tray. Bear in find that you want the cake to be reasonably flat as you’ll be slicing the cake into fingers and sandwiching two together if you’re making the cake like I did.
- Bake in the oven for about 20 minutes – keep an eye on it as the cooking time varies by loads depending on the thickness of the cake.
- When it’s cooked, leave it to cool and then cut it into small squares.
- Sandwich the squares together with Marshmallow Fluff and sprinkle with a little icing sugar if you want to go for the professional look 😉
I can see how Marshmallow Fluff cake is going to be a regular addition to our packed lunches in future judging by the way it’s going down at the moment….
