I’ve decided toshare my super easy muffin recipe with you again today because (a) I’ve just made a new batch of these muffins and loved them, and (b) I just got an email from a lovely reader saying she’s made a batch too and loved them!
I have a basic easy muffin recipe that I always stick to and I just add different bits and bobs to the mix depending on what sort of muffins I am making – the batch I made today were blueberry muffins using a couple of handfuls of frozen blueberries but I often chop up a chocolate bar or mash some mashed banana and cinnamon up to add in, both of which always go down well.
This really is a super easy muffin recipe and when the kids were on packed lunches I used to make a batch on a weekend and pop a few in the freezer to last through the week. If you get them out the night before and pop it in the fridge to defrost overnight then they’re perfect when lunchtime comes around.
Easy muffin recipe
- Preheat the oven to 190 / gas mark 5
- Sieve the flour, add the sugar.
- Mix the egg, milk and oil together.
- Add the egg mix to the flour mix and mix it together.
- Get rid of most of the lumps but don’t worry if there’s a few left.
- Add in whatever it is you are using to flavour the muffins… I used 2 chopped mars bars today but you can use practically anything. I often use those bags of frozen fruit that you can get from the supermarket (you don’t need to defrost it before using it). If you are adding fruit I would add about 150g – 200g.
- Bake for about 20 minutes and when you get them out of the oven its nice to sprinkle some brown sugar on the top of the warm muffins.
I’ve made a few concoctions over the years – Lime marmalade and coconut, peanut butter and choc chip, strawberry, courgette and carrot are just a few that spring to mind but for each one, you use the same easy muffin recipe as your base!

Can you believe this was 8 years ago? I think my photography skills have improved slightly these days so here’s some more up to date muffin pictures – I think they look about a thousand times better as I’m sure you’ll agree!

This is a terrific recipe. I have made lots of variations, and they have all worked well. The mars bar variety are always popular, I have hidden a dollop of mincemeat in the centre for a Christmas treat, made some chocolate muffins by replacing some flour with cocoa powder – they were a really odd texture when mixing, and I thought they would fail, but when cooked they were perfect. I baked three dozen plain muffins for a shared meal at church, and decorated them with buttercream icing and sprinkles, and they were all eaten. They are extra lovely fresh out of the oven, but also freeze really well. A winning recipe all round, thanks for publishing it!

Thanks for the recipe..I love the mars bar ingredient. I have also used buttermilk with muffins and that works really well too. I'm a big fan of the silicone trays – somehow it seems wrong putting something 'rubbery' into a hot oven, but that's the magic of these new products!

I know exactly what you mean about the silicone – it seems weird but they're loads easier to cook with I think and really easy to wash aswell.
