When I saw that English Mum was having a Kids Halloween Bake off as part of her Great Big Autumn Bakeoff, I mobilised the kids and we got cooking (this was way easier said than done as they were engrossed in a film at the time!).
Miss Frugal pored over her recipe books (she takes after me with this fetish) and discovered that the only thing we actually had all of the ingredients in for was Halloween meringue ghosts, so I proudly present to you, our entry for to the kids Halloween Bake off….
How to make your very own halloween meringue ghosts!
4 large egg whites
115g sugar
115g icing sugar
First things first, you need to separate your eggs which I’ll be honest I had no idea how to do (I know, how bad is that?). After a plea for help on Twitter, we went for @EnglishMum’s method, which seemed the easiest way to do it:
Miss Frugal was so not impressed that she was assigned that job – apparently it’s ‘like smelly jelly’. Anyway, once the smelly jelly job is done you need to whisk your egg whites together in a clean bowl (preferably using an electric whisk) until the mixture looks all white and fluffy and is stiff enough to make little peaks in the mixture.
Next up you need to add the sugar, one tablespoon at a time. After each tablespoon you need to whisk the mixture again. When all of the sugar has been added you can add the icing sugar to the mixture, again one tablespoon at a time.
After all of the sugar has been added you need to continue beating it until the mixture is back at the stage where it will form peaks. We decided against the ‘hold the bowl above your head test’ as we had enough mess with the separating the eggs but you can either do this to see if it’s done or you can just use a fork and see if the mixture holds its shape when you make a peak (or a mountain as my two call it).
When it’s ready, you need to use a piping bag to pipe ghost shapes, however, in the absence of any kind of technical equipment, we spooned our mixture into a sandwich bag and cut the botton corner off.
Pipe out your ghost shapes onto a baking tray lined with baking paper or just foil if you have none of that (like us).
You need to bake them in the oven at 120 c for about an hour and ten minutes. The cooking time will depend on how big your ghosties are but you can tell when they’re done because the bottom of them will be hard and they’ll lift off the foil quite easily.
Then the only thing left for you to do is to decorate them with a little coloured icing or some melted chocolate. Word of warning – you need to be very gentle at this stage, we managed to vapourise a few ghosties at this stage due to our heavy handedness.
They taste so lovely that I might even make a variation on them for Christmas. We could make little Christmas trees 😉
