Last week we were lucky to receive some lovely honey from Rowse Honey, it came in a lovely box with some gorgeous honey cupcakes which only just lasted long enough for me to take a photo….
The honey lasted slightly longer though, long enough for us to make a lovely honey cake yesterday afternoon in fact. Honey cake is our favourite type of cake to make – the shove it all in a bowl and mix type! The end results were lovely and it’s actually a very grown up kind of cake (unless you spread chocolate spread on it like we did
Honey Cake
100g/4 oz butter or margarine
2 tbsp sugar
4 tbsp clear honey
2 eggs
175 g/6 oz self-raising flour
1/2 tsp baking powder
1 tsp mixed spice
Mix all of the ingredients together in a bowl and spoon into a greased baking tin.
Bake in the oven for 20-25 minutes at 190 c.
