Is there an award for that in the MADs? If not, Sally then you should take note for next year 😉
Anyway, I’ve had an interesting week this week and *mostly* managed to stick to last week’s meal plan so I’m ready to go with next weeks. We’re starting to eat more Wintery type food seeing as it’s October and the heatings back on so this week’s menu has a lot of what I think of as comfort food – not sure how that’s going to work with my diet though.
Monday – Sausage, chorizo and bean casserole.
Tuesday – Lasagne (without the white sauce as I’m going to try and make a slimming world version) with homemade potato wedges.
Wednesday – Homemade paella
Thursday – Slow cooker chilli with rice – I’ll make extra and freeze some small portions for jacket potato toppings.
Friday – Homemade fishcakes with mushy peas and chips.
8 sausages
50g chorizo (you can use more or less but I used half a 100g pack so I could save some for the paella)
1 tin of baked beans
1 tin of chopped tomatoes
1 small onion, finely chopped (or a handful of frozen chopped onion)
1 green chilli, again finely chopped
1 teaspoon paprika
2 crushed garlic gloves
Mixed herbs to taste
- Lightly brown the sausages in a pan for a few minutes.
- While the sausages are browning, add everything else to the slow cooker and give it a good stir.
- When the sausages are brown, add them to the slow cooker. You can either cut them up or pop them in whole.
- I blast it on high for 2-3 hours but it cooks just as well on a lower heat for longer,
It might not look like a culinary triumph but it tastes gorgeous. It’s spicy but it a warming rather than a hot kind of way. It’s lovely served with rice or potatoes and you can add just about anything to it. I often just add a bit of whatever veg is in the fridge when I make it – usually some brocolli or some peas but I bet it would be lovely with some peppers or mushrooms in it aswell.
I also find this really easy to adapt to Slimming World. I use the Morrisons sausages that are half a Syn each and I Syn the chorizo which I believe is 2.5 Syns per 30g. I serve mine with plan rice and lots of extra veg so it makes a really filling meal.
