If you’ve ever wondered how to make sugar mice then this is the post for you because I’m going to show you how to recreate these little cuties.
Before I start though, I did want to show you a picture from the first time I shared a ‘how to make sugar mice’ post on this blog. 😉 For some reason, I thought it was OK to use orange food colouring in the absence of pink food colouring and then to make it even worse, I used red icing for the eyes.
What do you think? They really are the stuff that nightmares are made from! They look horrific and I have no idea why, but I still thought it was OK to post them so for the last five years, these scary little creatures have been haunting my blog.
The other day though, a photo of my scary sugar mice popped up in my Facebook feed memories and I realised that I absolutely had to do something about them so I made them again but with nice tasteful non-scary pink food colouring. I think they’re a huge improvement and I know that no-one is ever going to google how to make sugar mice and come here in search of cuteness only to find orange horrors.
How to make sugar mice
I used a sugar mice mould that I got from Amazon years ago but you can absolutely go freestyle if you can make a mouse shape.
300g icing sugar
1 egg white
A couple of drops of peppermint essence
A couple of drops of pink food colouring (steer clear of orange ;-))
- Beat the egg white until it’s frothy and white but not at the meringue peak stage though.
- Pour into the icing sugar along with the peppermint essence and mix it all together until it’s a smooth dough – the best way to do this is to get your hands in the mixing bowl. If you need to add more icing sugar to firm it up then do that as the firmer the mix is, the easier these guys are to get out of their mould without injuring them.
- At this stage, you can squish some into your mix into your sugar mice moulds if you just want to go for white sugar mice. If you want to make some colourful ones then add a couple of drops of colour to the mix and knead that in until it’s evenly distributed throughout the sugar mix. I halved my mix and did half white and half pink.
- I leave mine to set overnight in the fridge.
- I used some shoelace sweets for the tails and some white chocolate icing that I was using for something else for the eyes.
I think you’ll agree that sugar mice look so much cuter in pink or white. 😉
