Slimming World quiche is basically a quiche with no pastry – very similar to my leftovers frittata recipe but with the addition of cottage cheese.
I love making frittatas because they’re great for using up leftovers and perfect for taking to work for lunch. When I started Slimming World on Monday it was inevitable that a Slimming World quiche version would be the first thing I tried out.
I wasn’t disappointed and its definitely something I would eat whether I was on Slimming World or not as it was delicious, the fact that it’s syn free is an added bonus!
Slimming World quiche
4 eggs
1 tub Tesco Healthy Living onion and chive flavour cottage cheese
60g red leicester cheese (I used 2 HEA as I knew it would be 2 days lunches for me – you can use more, less or none at all)
Cooked potato (I cooked an extra jacket potato and just chopped that up)
Ham (I used Tesco tinned ham, again as I had this in and the one I had was syn free)
- Spread the cottage cheese in a layer across the bottom of your flan dish.
- Add the chopped potato and the chopped ham before sprinkling with cheese.
- Whisk the eggs together and pour over the mix.
- Season with black pepper to taste.
- Bake for around 25 minutes in a hot oven until your super healthy and deliciously tasty Slimming World quiche is looking golden and the centre feels firm but still springy.
Slimming World quiche is very versatile – you can use up leftovers or buy your favourite things, you can use whatever fillings you want and it’s a brilliant way to get your super speed food in.
