Baileys Banana Bread!

I’m just going to leave that there with no further introduction. 

Honestly, why have I never thought of adding Baileys to Banana Bread? 

It’s genuinely the best banana bread I’ve ever made so obviously, I thought I’d share it with you all today – you can just consider it an early Christmas present from me. Just thank me later. 😂

I often freeze my banana bread (it lasts up to three months) and it tastes even better when it’s defrosted in my opinion. Most of the Google search results will tell you to wrap in foil or cling film but I use baking paper and wrap it quite tight and then I pop it in an old Tupperware storage tub I have with a lid. It freezes really well this way and when I get it out to defrost, it takes about 3 or 4 hours to thaw out.

Lots of people will freeze it in smaller wrapped slices but I feel like the banana bread sometimes loses some of its moisture when you freeze in slices so I tend to freeze the whole loaf at a time.

Baileys Banana Bread....

Yield: 2 loaves

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients

• 200g sugar
• 110g butter
• 2 large eggs
• 1 tsp vanilla extract
• 100ml Irish cream liqueur
• 1 tsp salt
• 1 tsp bicarbonate of soda
• 1 tsp ground cinnamon
• 250g plain flour
• 3 large very ripe bananas
• {Optional} 100g - 200g walnuts finely chopped in a food processor ideally

Instructions

1. Preheat the oven to 180°C.
2. In a large bowl, cream together the sugar and butter.
3. Beat in 2 large eggs.
4. Add in the Irish cream, the vanilla extract, and the bananas slightly mashed up.
5. Stir in the plain flour, cinnamon, bicarbonate of soda, and salt, and mix it all together.
6. Fold in your walnuts.
7. Divide mixture between 2 non-stick, greased loaf tins,
8. Bake for between 40 minutes and 1 hour, or until a knife inserted in the centre comes out clean.
9. A capful of baileys if you have some spare will work perfectly to just drizzle over the top of each loaf when they're still hot. It's not necessary but it definitely adds to the flavour.

Notes

You can half this recipe and just make one load but if you just have a couple of bananas to use up. I had four medium-sized bananas so I made a big batch and will pop one in the freezer.

I usually make my banana bread in loaf tins but I had some foil containers that I was sent a while ago but even though they worked really well for this recipe as I planned to pop one of them in the freezer I definitely don’t recommend going out and buying single-use foil containers like these.

I promise you that this Baileys banana bread is going to be amazing whether it’s cooked in a loaf tin, a brownie tin or even a round cake tin so whatever you have in the kitchen cupboard is fine – I was just using these containers up as they’ve been in my cupboard since for a good 18 months. 😂

Don’t take my word for how amazing this Baileys Banana Bread is though – I made this batch last Friday night and woke up to this on Saturday morning…

One was almost entirely gone so clearly the kids got a bit hungry last night after I went to bed – that’s the highest praise you can get!
