I love homemade risotto but it's one meal that I can never seem to get my portion sizes right and I almost always end up with more than we need for one meal which isn't a bad thing as I've found a great way to use up my leftover risotto - Riso al Salto. I'm actually not here right now, I'm having my annual mother and daughter long weekend away with Miss Frugal and hopefully, I'm having a great time.
