I like to bake every Sunday to make sure that we have enough treats for our packed lunches through the week. I usually make something like packed lunch cake or some sort of muffins using my tried and tested muffin recipe but today I had some coconut milk to use up so I decided to pair it with some lime marmalade that's been in my fridge for what seems like forever and make some lime and coconut muffins! You can use any marmalade or jam (and probably even chocolate spread or peanut butter with this recipe but you might need to substitute the coconut milk with normal milk depending on what … [Read more...]
Cupcake Sunday – After Eight cupcakes….
After Eights (along with Bailres, Advocaat and Chocolate Oranges) are things that I only really buy at Christmas so when I was trying to think of what I would use to make some Christmassy cupcakes, I decided to go with After Eight themed cakes.I bought the supermarket's own make though as I didn't know how they'd turn out and I would have been gutted if they'd turned out wrong and I'd wasted a whole pack of After Eights! They were only 99p and to be honest they tasted exactly the same as the usual ones so I'll be buying them in future anyway!150g butter or margarine 150g sugar 3 … [Read more...]
Cupcake Sunday – The best chocolate butter-cream you’ll every try and Reindeer cupcakes….
A couple of weeks ago it was Mr Frugal's birthday and as he was at work all day, I decided to make him a birthday cake ready for when he got in from work. Not just any chocolate cake though, I wanted to make him the best chocolate cake he'd ever had - I'm nothing if not ambitious you know! I made a normal 2 layer chocolate sponge cake using this recipe (except I left the choc chips out). I sandwiched the layers together with cherry jam and covered it in the most amazing chocolate buttercream you've ever tasted. Next up I covered it with Minstrels and Maltesers and added a candle and Voila … [Read more...]

Nothing too complicated from us here today, we've been too busy decorating and building furniture....In fact today's recipe is so simple you could probably make it with your eyes shut, it's a recipe that I use over and over but with a teeny tweak to make a yummy chocolate cake into a winter warmer chocolate cake.Chocolate Cinnamon Cupcakes 150g butter or margarine 150g sugar 3 eggs 125g self raising flour 35g cocoa powder 2 heaped teaspoons cinnamon 1 tablespoon of milk A few drops of vanilla essenceCream the sugar and the butter together. Cupcake Sunday – Mini double chocolate chip cupcakes with popping candy….
This year, for the first year ever, we're having a few fireworks at home rather than going to a public firework display and I'm actually quite excited. A few friends are coming round tonight with their kids and I'm hoping the rain stays away so we can have a good night.Seeing as there will be 12 of us tonight, I'm making mini double chocolate chip cupcakes rather than full size ones so that I can do lots of different toppings and everyone can try a few and still have space left for the chilli I have cooking away in the slow cooker right now.The recipe for the cakes themselves is … [Read more...]
