I'm not normally one for making food look pretty but last week I spotted some lovely looking orange peppers in the reduced section at the shop and as soon as I spotted them, I knew exactly what I was going to make with them - Halloween Pumpkin Peppers! And I don't even care that there's still a month left until Halloween!Halloween pumpkin peppers are so easy to make and they can be prepared in advance of when you want to cook them which makes them even better in my eyes. I made these guys when I was on a late shift at work last week and left them in the fridge for Mr Frugal and the kids … [Read more...]
Leftover Mash Cheesy Potato Pancakes….
These cheesy Potato Pancakes are an amazing way to use up leftover mashed potatoes!I've tried making something similar to this in the past to use up leftover gammon and mash but as amazing as they tasted, they definitely didn't look as tasty as they could have done. And then I saw a recipe for something similar which used flour to thicken the mix before cooking so I had a try making them with the added flour and they held their shape so much better when they were cooking. I also used more oil this time which isn't my favourite way to cook but it definitely helped them … [Read more...]
Instant Pot ham, potato and corn chowder….
Honestly, this Instant Pot Ham, Potato and Corn Chowder is life-changing* and I can practically guarantee that once you've made this once, it'll be a regular addition to your weekly meal plan.*OK, life-changing may be a slight exaggeration but it's AMAZING!**Also, I should say that the photos don't do this justice as it was a grey day outside (hence the need for comfort food like this) and there was no way any amount of editing was going to pep them up!I'm really loving my Instant Pot now that I'm starting to get a bit braver with it! When I first got it, I honestly looked at … [Read more...]
Hot Cross Bun Bread and Butter Pudding….
If you have leftover hot cross buns to use up then this hot cross bun bread and butter pudding is exactly what you need! I first made a variation of this hot cross bun bread and butter pudding recipe last year when Master Frugal had his Food Tech exams to practice for and was trying to master the custard part of his dish. I had four leftover hot cross buns to use up and seeing as he had his custard mix ready to go, I sliced up the hot cross buns and used them instead of bread! It was so nice that we bought a pack of hot cross buns that weekend just to make this with and that's not … [Read more...]
Traditional Bubble and Squeak Recipe….
At this time of year, the one recipe that should be at the top of your must-cook list should absolutely be this traditional Bubble and Squeak recipe!Traditional Bubble and Squeak is made from cooked potatoes and cabbage, mixed together and fried but my Dad used to make his with whatever leftover vegetables we had on the day. We had it every Boxing day using our Christmas Dinner leftovers and at least once a month using Sunday Dinner leftovers often served with a poached egg on top and some slices of cold meat with it.I make my own version now and it's one of those tastes that … [Read more...]
Amazing Blue Cheese Dip Recipe…
What's the best thing to do with leftover Blue Cheese? Yep, make a blue cheese dip! I'm not a fan of blue cheese at all but I do love a good cheeseboard so I can never resist buying a Christmas cheeseboard to enjoy over the festive period. The problem is that the cheese selections that you buy always include some blue cheese which is always the last cheese in the box.I used to give it to my Dad to enjoy but these days it just usually goes to waste which I hate. This year, I thought I'd have a go at making a blue cheese dip to see how that went and I can't believe how nice it actually was.The … [Read more...]
