A few weeks ago, I made homemade chicken stock in my slow cooker for the first time in ages so I thought I'd share it with you. It's not hard to make and the results are amazing so I'm not sure why or when I stopped making it on a more regular basis but now that I've made it again and realised how much better food tastes with homemade chicken stock rather than when it's made with stock cubes then I'm pretty sure I'll be making it again... and again...When I cook a chicken for Sunday Lunch I can get enough chicken from it to do that one meal and then one other meal which just needs … [Read more...]
Spiced root vegetable soup – just what you need to warm you up….
I love, love, love soup and this spiced root vegetable soup is just perfect on days like today (and any other kind of day for that matter).I got my soup maker a couple of years ago now and I can honestly say that what my husband thought was going to be one of those gadgets that gather dust has turned out to be my most used thing in the kitchen!I've tried all sorts of soup recipes with varying degrees of success (FYI - Broccoli in a soup is not the way to go) and my favourite ones are the kind of soups that have a slight kick to them to warm your tummy when it's cold out.For a long … [Read more...]
Chilli, Mango and Lime Salsa….
This Chilli, Mango and Lime Salsa is amazing and is a super fresh alternative to traditional tomato-based salsa.Miss Frugal is a huge mango and avocado fan so they're always top of my list when I go shopping. She's not been feeling that great over the last couple of days so when I went to make tea last night, I realised that there was a mango and an avocado left in there that were about to reach that stage where they're past their best.I was making cajun chicken for tea so I thought I'd make some sort of salsa with them as I had a couple of tired looking spring onions in too and I … [Read more...]
Basic Quiche Recipe – perfect for using up leftovers….
My basic quiche recipe is one that I learned from my Mam way back when I used to look forward to her baking days which would always consist of the same things - quiche, corned beef pie and a random cake recipe that she would choose from her Be-Ro cookbook each time.My basic quiche recipe is an adapted version of my Mam's, mainly because I don't make my own pastry.I don't do the whole homemade pastry thing usually for a couple of reasons - 1) ready made pastry is about a million times easier for me and b) it's way less mess and c) there are never enough hours in the day for me as it … [Read more...]
#LoveYourLeftovers- Slow Cooker Pulled Pork Baked Potatoes….
I've shared my recipe for slow cooker pulled pork a good five and a half years ago now and over the years, it's become a firm family favourite that regularly features on our meal plan.Last Friday, I bought a big piece of pork shoulder from Morrisons and made a big batch of slow cooker pulled pork which we had for tea in yellow stickered brioche buns (from M&S no less) with some Potato wedges from the freezer.I wasn't around for tea on Saturday night but I did leave instructions for Mr Frugal to make a batch of homemade pizza dough to make pizza for tea, which he did after much … [Read more...]
Leftover Turkey and Ham Pie….
We were planning on just getting a chicken for this year's Christmas Dinner but at the last minute, we decided to buy a turkey crown, which we all know means lots of leftover turkey to use up! We had Turkey sandwiches for lunch and some sliced gammon and egg for tea on boxing day and last night we had amazing leftover turkey and ham pie.It was so delicious that I thought I'd share it with you because it's an amazing way to use up any leftover meats you have and you could also add leftover veggies to it if you don't use them all up in the bubble and squeak for Christmas Day … [Read more...]
