You don't need to have a big freezer to make your freezer work for you - trust me, I know this from experience! With a little bit of organisation, the smallest of freezers can help make life easier for you. Batch cooking This is a great one, especially if you use your slow cooker a lot. I regularly make extra portions when I'm cooking things like chilli, mince and bolognaise and I pop a family sized portion in the freezer ready for another time. It means that I have a homemade 'ready meal' sat waiting in the freezer when I need it which is a godsend when I finish work at half two and rush … [Read more...]
Mini Egg Omelettes – Great for breakfast on the go, Slimming World or just for a Yummy snack….
One of my favourite ways to use up leftovers is to make slow cooker fridge bottom frittata and I was planning to cook it last night for tea but clever me decided to make a batch of homemade tomato sauce when I got home from work without thinking that I'd be needing to use the slow cooker for the frittata! So instead of making one big frittata to use up some leftover bits and bobs, I decided to make mini frittatas in the oven instead and actually, now that I've made them this way I think they would be great to make for breakfasts and mini snacks as well as being great for those of you … [Read more...]
Is a slow cooker really cheaper than your oven….
As you probably know, I'm a huge fan of my slow cooker - it makes life easier for me as a working Mum and it saves me money because it's cheaper to use than the oven.I say it's cheaper to use because that's what I've always been told - that it costs around the same as a household lightbulb to run and is much cheaper than the oven which is rated as one of the most expensive appliances in the house to run.Even though the question is probably up there in the top five questions that I get asked, I've never actually looked into just how much cheaper because I have no idea how to compare the … [Read more...]
What we’re eating this week {8th March 2015}….
After last week's rather wasteful shopping trip and cobbled together meal plan I'm back in the game this week with a nicely organised meal plan which was planned in advance as it should be.We seem to have a really busy week this week so I suspect there'll be a bit of chopping and changing but we have enough in that we should be able to get away with that without having to pop to the shop. Here's what we have planned.... MondayI had some prawns in the freezer so I made a quick prawn curry tonight for tea although I may have cheated a teeny bit as I used two of the jars of curry … [Read more...]
Homemade Polenta Fries….
For those of you who don't follow my meal planning blog, Meal Planning Made Easy, I thought you might like to have a quick drool over my new favourite food - homemade polenta fries.Polenta fries are a delicious alternative to normal fries and they're relatively cheap too - 74p worth of polenta did plenty of fries for us all! All I do is slice the polenta and coated them in olive oil sprinkled on some seasoning and popped them in the air fryer until they looked golden (15-20 minutes). You could just cook them in the oven on a high heat if that's easier for you though.Don’t miss … [Read more...]
What we’re eating this week {1st March 2015}….
You know how I always say that the most important part of meal planning is the few minutes that you spend before you go shopping working out what you have in, what you'll be eating the next week and writing a shopping list?Well, this week I didn't do any of that before I went shopping! In my defence, I always to my shopping on a Friday evening because (a) that's the only time that I'm free to go without the kids over the weekend and (b) my cupboards are looking a bit like mother Hubbards by then. I had a really busy afternoon on Friday so I didn't get chance to even boil the kettle let … [Read more...]
