Today I'm going to tell you how a £1 ice cube tray has revolutionised* my meal planning.(*Ok, maybe revolutionised is a bit strong - I should probably go with improved rather a lot although that doesn't have the same ring to it, does it?. ;-))Not long ago, when I shared my post about how to build a frugal pantry, I mentioned that I used ice cube trays in my freezer to help with my meal planning and prep and I got lots* of messages asking me to reveal my secret.(*Ok, I got two messages about it and one only mentioned the ice cubes tray thing as a PS.)Basically, I have about … [Read more...]
This week’s meal plan {3rd May 2021} ….
So, it's been a while since you've seen a meal plan over here (in fact, it's been a while since I even shared a meal plan over on Meal Planning Made Easy if I'm honest but I promise that the lack of meal planning posts isn't because I haven't been doing it, it's more that I've just been so busy and genuinely haven't had time to share our meal plans with you.I'm really conscious about what we're eating at the moment as I really do want to get into better shape. Thanks to a mix of healthier eating and exercise, I'm back to my pre-lockdown weight which admittedly, wasn't a healthy weight … [Read more...]
2 meals from one – Mexican Pasta Bake and Instant Pot Enchiladas…
So, last week I made a big batch of Mexican style Mince that I then made into a Mexican Pasta Bake for tea on Thursday with the leftovers transformed into super quick Instant Pot Beef Enchiladas for tea on Friday!I thought you might like to see how I make my Mexican Style Mince and then a couple of the ways that I turn it into meals - I absolutely love it made into a pasta bake and regularly make a giant pasta bake just so we can eat it for lunchtime leftovers too! It's one of those meals that's absolutely made for batch cooking because it freezes so well and it's also one where you can … [Read more...]

Hello Fresh – overhyped and overpriced?
Everywhere I look right now online, there's an influencer telling me how good Hello Fresh is and how my life will be so much better if I subscribed. I usually just scroll on by but a couple of weeks ago, I was too weak to fight it anymore and I ordered myself a box.(in case you don't know what Hello Fresh is, it's a weekly meal delivery service where you choose your meals and every ingredient you need is delivered all measured out ready to go with a super-easy to follow recipe card) I know what you're thinking - no one who blogs about money saving and living a frugal … [Read more...]
Homemade Macaroni Cheese Recipe….
My homemade Macaroni Cheese recipe is what I'd call my signature dish if I ever decided to audition for Masterchef (not that I would with my lack of culinary skills) because everyone who tries it, loves it!I can guarantee that if I ask either of the kids what they want to see on our meal plan, they'll ALWAYS ask for homemade macaroni cheese and I'm pretty sure that 90% of the meal plans that I've ever shared on here will have featured this meal in one form or another. We've had it with cooked broccoli or cauliflower added to it, with crispy bacon served chopped up on top, with … [Read more...]
