Do you struggle for interesting but frugal packed lunch ideas?A couple of years ago I wrote about how I could make a healthy and filling packed lunch every day for around half of what I would pay for a school dinner and whilst I know that rising prices would have changed the costings a little bit, I can still make a packed lunch for less than I would pay for a school dinner.I still make the packed lunch cake and the cheesey pops (like cheese straws) on a weekend sometimes to use in the following week's packed lunches but as the kids have got older, they like a bit more variation in … [Read more...]
How to separate an egg – the easy no-mess way….
I've always wondered how to separate an egg without making a mess as I usually end up getting my hands covered in egg when I try to do it and it often takes me more than one attempt to do it right! Not so long ago, someone at work told me what their secret was to separating eggs and at the time I remember that I just nodded my head and smiled whilst thinking to myself that their method would clearly never work. But then last night when we were making sugar mice we needed to separate an egg so I decided to give it a go and to my amazement, it actually worked so I enlisted Miss Frugal's … [Read more...]
Leftovers Inspiration – Five ways to use up leftover Risotto or Paella….
Homemade Paella and Oven baked risotto are two of my all time favourite meals but I always end up with leftovers so I've been experimenting with different ways to use up the leftovers....These are really simple to make as all you need to do is make golf ball sized balls using the leftover paella / risotto. Then you just flatten them down and bake for around 20-25 minutes and you're done. The cakes make a great little starter with some spicy mayo on the side.I wrote about how to use up leftover risotto by making risotto balls here and the recipe works just as well with paella … [Read more...]
Slow Cooker ham in Coca Cola….
Foods like lemon and honey, tomato and basil, Nutella and peanut butter are all perfect flavour combinations. I wouldn't have put ham and Coca Cola on my list of favourite food combinations at all - until last night when we had slow cooked Coca Cola ham.My version of coca cola ham is a much simplified version of the Nigella ham in coke recipe as it doesn't have any fancy stuff in it ;-)It really couldn't be easier to make and the results are delicious.I always bring my ham joint to the boil in a pan for five minutes to get rid of any excess salt but I know lots of people … [Read more...]
Why you should use your slow cooker more often….
Convenience - This morning, like most mornings, I had to have both the kids and myself ready to leave the house by half past seven in order to get them to breakfast club so I could get to work on time. After school, I picked up one child, came home for half an hour and then went back to pick up the other one. I then picked up Mr Frugal from work and we came home, all hungry and ready for tea. I had tea on the table in about ten minutes because I'd taken two minutes (literally that long) to add a couple of handfuls of frozen onions, a packet of mince, some water and stick cubes to the slow … [Read more...]
Slow Cooker Leftover Frittata….
I've posted this week's meal plan over at Meal Planning Made Easy but for those of you who haven't ventured over there yet or don't meal plan, I wanted to share a recipe that I posted on there over the weekend. It's for a frittata made using whatever you have in the bottom of your fridge that needs using up and uses the slow cooker which means it's super easy to make....As far as the recipe goes, there isn't actually one because it depends what you have in to use up but I can tell you the recipe for the version that I just made and you can adapt it as you want/need to....3 (ish) cold … [Read more...]
