This is a bit of a back to front meal plan because I'm going to tell you what we ate last week instead of what we'll be eating this week.....Seeing as last week was National Vegetarian Week we decided to have a (mostly) veggie week which was great for me because it gave me a bit of an excuse to cook a few different things as I'm a bit stuck in a rut with our meals at the moment. Mini Turkey and Red Onion Barbecue Pizzas….
My two love homemade pizza but for a quick lunch, I make them a cheats pizza using english muffins as the base.... Mini Muffin Turkey and Red Onion Barbecue Pizza 1 English Muffin per person Barbecue Sauce Cheese Red onion Turkey Salad to serveHalf each muffin and spread each half with barbecue sauce. Top with some cooked turkey breast. Add some sliced red onion. Sprinkle on some grated cheese and grill until the cheese is bubbling and starting to turn golden.Serve with a smile face salad for lunch and add some homemade wedges to make it into a meal for tea. Family Friendly Frugal meals – Slow Cooker Chicken Curry….
My freezer is full of supermarket bargains at the minute so we're going to have a cheap week this week hopefully. I managed to get a ham joint reduced to £2.30 the other day so I've cooked that and what we didn't use for tea was sliced up and made up into a few small portions that were put in separate sandwich bags and added to the freezer. I can use them for the wraps on Monday and the pizza on Wednesday. This week’s meal plan – the busy Easter Holidays edition….
The last month or so has been slightly chaotic (as I may have said ;-)) so my meal plans have been very 'flexible' meaning, virtually non existent which has led to more money being spent on our food budget. This weeks meal plan – the leftovers from the freezer week….
This week I've been testing out a new meal planning tool which lets you put input one or more ingredients into it and then gives you a selection of recipes that you can choose from to use up your ingredients. I'm hoping it's going to help me empty my freezer of the random leftovers and bits and bobs that I've bought from the reduced section lately.I do like the meal planner as it gives inspiration on what you can cook using what you already have in.
