Meal 2 – Stretching the Ham Joint….
Here's meal 2 that I have made out of the ham joint. I used the water that I boiled the ham in and added a chopped onion, 4 carrots and 2 biggish potatoes. Healthy Lunches for Work….
Now that I am back at work and on Slimming world, I need to sort out my lunches. The canteen at work is ridiculously priced and there is nothing else near to where I work so I have spent a fortune in there in the past. I now need to make and take frugal lunches that are yummy, filling, frugal and slimming....I regularly don't get away from my desk to eat and as I work with a computer I have been suffering from eye strain and headaches - to the point where I thought I needed glasses. Whats cooking today…. Updated with the finished tea….
In anticipation of my freezer clear out this week I am making some bolognaise sauce to be frozen for some quick dinners when I am back at work next week.I haven't bought anything in especially to make this, I have just used what was already in the freezer and I am trying to make it without the help of a bolognaise sauce packet mix!To save on time, I have just thrown all the ingredients in the slow cooker and now it's going to quietly bubble away all day without any help from me. Yorkshire Puddings….
Sunday Dinner wouldn't be Sunday Dinner without Yorkshire puds but no matter what I try I can't seem to get those huge yummy looking ones that you see on the TV!The recipe that I use is 100g of plain flour, 1/2 pint milk and 2 eggs. I heat the oven to the hottest temperature and then preheat the oil in my pudding tins. I do everything that the TV chef's say but.....They just don't work out right. Recipe of the week – Magic Mince
I love magic mince, you can make a huge batch and then bung it in the freezer until you are ready to use it. It is so versatile you can make it into bolognaise, chilli, lasagne, cottage pie and probably loads of other things.The basic recipie is:1kg Lean minced beef2 rashers of back bacon2 onions (I prefer the frozen ready chopped stuff)2 Garlic cloves600 ml beef stockA large glug of red wine (optional)A teaspoon of thyme (fresh or dried)Fry together the chopped up bacon, onions and garlic until the bacon is cooked and the onions are soft.
