We're pretty new to the trendy world of avocados and guacamole but I think you'll agree that we've caught up fast with this amazing homemade Guacamole!When Miss Frugal and I went to New York last month we discovered Chipotle which is a kind of fast food chain but the food is Mexican and honestly, the most amazing food I've had in a long time. I haven't shared a weekly meal plan on here for ages now, have I?I started posting them over on my meal planning blog each week but even that kind of gradually dropped off as life got too busy over the last few months to do anything but quickly scribble my plans on the back of an envelope in the 10 minutes before we went shopping.That 'method' of meal planning, although better than not meal planning at all, isn't great for us as I tend to stick to the same few meals when I do it that way simply because I know they're easy to shop for and easy to cook. When I was trawling through Pinterest a couple of weeks ago looking for some Easter themed cupcakes I came across lots of pictures of amazing mini egg pinata cakes which all had hidden mini eggs in the middle so they all popped out when you went to slice it. Riso Al Salto – A great way to use up leftover risotto….
I love homemade risotto but it's one meal that I can never seem to get my portion sizes right and I almost always end up with more than we need for one meal which isn't a bad thing as I've found a great way to use up my leftover risotto - Riso al Salto.
