Slimming World Quiche has been one of my go-to lunches since I first tried it a couple of years ago and I know I've shared the recipe with you before but today I've made a full on fully loaded version of it and it tasted so ridiculously good that I thought it was worth sharing what I did to make today's so tasty! How to make fully loaded Slimming World Quiche 5 eggs 1 tub fat free cottage cheese 60g grated cheese (I used 2 HEA as I knew it would be 2 days lunches for me – you can use more, less or none at all) Cooked potato 2 cooked potatoes chopped and boiled (I often just cook them … [Read more...]
A week’s worth of Slimming World friendly packed lunches….
We're off on holiday in a couple of weeks so I'm focusing on two things - saving money and losing weight! To help me with both of these, I've been taking Slimming World friendly packed lunches to work and because I'm so please with myself for avoiding soggy sandwiches all week I thought I'd share my week's worth of Slimming World friendly packed lunches. Day 1 - Lime and Chilli cous cous with spinach, chicken and sun dried tomatoes (2 syns for the sun dried tomatoes)I don't measure when I make cous cous, I just add how much I want to a bowl, add the flavour and pour enough boiling … [Read more...]
Riso Al Salto – A great way to use up leftover risotto….
I love homemade risotto but it's one meal that I can never seem to get my portion sizes right and I almost always end up with more than we need for one meal which isn't a bad thing as I've found a great way to use up my leftover risotto - Riso al Salto. In fact, we love Riso al Salto that much that I do sometimes deliberately make extra just so we can have this for lunch the following day.Riso al salto is traditionally the way that leftover risotto would be used up in Italy but I've also made a Spanish version using leftover paella which is almost, but not quite as delicious. How to … [Read more...]
Slimming World on a Budget {Week 3}….
So, rather embarrassingly, my last Slimming World update was way back at the end of January and I don't have too much more to report since then as I've struggled more than I expected. My first struggle was that I was getting stomach cramps on about day 2 or 3 each time I tried it for some reason so I gave up each time. My specialist mentioned that Slimming World may not be the best diet for me to follow as it doesn't necessarily encourage the best eating habits ( apparently the 'free' foods can encourage over eating of the wrong foods) and he suggested I give Weight Watchers points system … [Read more...]
Slimming World on a Budget {Week 2}….
Well, I didn't have a great first week at all!Remember last week when I said that I was supposed to wait for the OK from my specialist to start Slimming World but I'd decided to start anyway as I felt ready? Well, it turns out I really should have waited!I started to feel a bit 'Meh' (that's the technical term ;-)) after a few days and by day 4 I really wasn't feeling great at all. I put it down to a bit of a tummy bug at first but the thought occurred to me that it might be the food I was eating so halfway through day 4 I went back to eating normally and the following day … [Read more...]
Perfect Slimming World chips with homemade chunky tomato ketchup….
It's OK, I'm not going to start posting about Slimming World every day but after my post yesterday, I did want to share with you my secret to perfect Slimming World Chips because they're great for everyone, not just people on Slimming World because they're healthy to make and delicious to eat. ;-)I don't peel my potatoes when I make Slimming World chips because (a) I'm lazy, (b) they taste nicer with the skin on and (c) there's loads of good stuff in the skin. I just give them a quick rinse under a cold tap and then cut them up into chip shapes.Next, I just pop them in a pan of … [Read more...]
