Chilli and lime roasted tomatoes is one of my favourite quick and easy recipes – it’s perfect for when we have people round and even better when I’m on my own as I don’t have to share. 😉
All you need to make it are a pack of cherry tomatoes, one or two limes (depending on how juicy they are), a couple of garlic cloves and a fresh chilli. Some basil leaves finish it off lovely if you’re feeling posh but more often than not, I make it without.
It’s not a particularly spice dish so you need to get rid of all the seeds from the chilli and chop it as finely as you can. Then just add the tomatoes to an oven proof dish – I use one that I can use to serve it in when it’s done to cut down on pots!
Add the garlic (usually chopped smaller than this but I delegated this to Mr Frugal too) along with the chilli and the basil, if you’re using it.Cook on a low heat for about twenty minutes. The tomatoes still need to be firm enough to pick up and eat but they should also be a bit soft and squidgy.
Unfortunately, I can’t give you the after picture as I forgot to take a picture of them before they were eaten but I promise that they looked gorgeous and tasted even better though and I really recommend trying chilli and lime roasted tomatoes next time you’re entertaining or even just for yourself.
Not only is this yummy, its pretty cheap and if anyone is on Slimming World (and probably Weight Watchers) its completely free so you can eat as much as you like of it.
