You know me, I love an easy peasy recipe so when I found this one for Christmas Cookies over on Parentdish, I couldn’t resist trying it.
Christmas Spice Cookies
250g plain flour
125g butter
125g brown sugar
1 small beaten egg
3 teaspoons mixed spice
pinch of salt
Pre heat your oven to 190’C / 375 F / Gas mark 5
Beat the butter and sugar and then add the beaten egg to the mixture bit by bit.
Add the rest of the ingredients and mix them all together until you can get your hands in and make it into a ball of dough.
Roll out the dough until it is about 1/2 cm thick, then cut out your biscuits.
Place each biscuit onto a greased baking tray and cook for about 15 minutes. You can tell they’re done as they’ll go a lovely golden brown.
You can use a straw to make a hole at the top of each biscuit before cooking them so that you can hang them from the Christmas tree if you want to – I meant to do this but got distracted by my glass of mulled wine and forgot 😉
When they’re cool, you can ice them – you’ll see we went for a traditional red and green colour scheme which looked fine in my imagination before I actually let the kids loose on them! On the plus side they’re very yummy, smell very Christmassy and taste gorgeous.
