Oh my goodness, you are in for a treat if you try this school dinner coconut cake because it is genuinely the most amazing cake I’ve made in a long time!
Honestly, it’s such a lovely cake and takes me right back to my school days as I’m 99% sure that this was one of my favourite school dinner puddings. In fact, it came a close second to something I can only describe as lumpy pink custard which is a description that doesn’t do my memory justice!
I should also say that the photos of this cake don’t do it justice either but it was such a dark miserable day outside when I made it that no amount of moving the plate around the house to find some light was going to help it. 😉
Anyway, back to the cake itself…
What you need to make my Amazing Coconut Cake
200g sugar
200g butter or margarine
175g self-raising flour
50g desiccated coconut
4 eggs
For the topping – 2-3 tablespoons jam, coconut to sprinkle
Pre-heat the oven to around 180c
- Cream together the sugar and the margarine until they’re light and fluffy.
- Add the eggs and beat the mixture until it’s combined.
- Add the flour and the coconut and give it a good mix until it’s all mixed together.
- Pour into a greased baking tray and pop in the oven for around 20-25 minutes until you can stick a knife it and it comes out clean.
- When the cake is cool, warm the jam in the microwave for about 30 seconds and then using the back of a spoon, spread the jam on the top of the cake.
- Sprinkle the coconut on top of the jam, and voila, you have the most delicious yummy cake ever!
I guarantee you’ll make this once and then you’ll be hooked.
