I’m sharing a recipe today that I know I’ve shared with you before (probably every pancake day for the last couple of years I expect) but it’s so good that I knew you wouldn’t mind seeing it again 😉
I used to hate Pancake Day, mainly because I can’t flip a pancake to save my life and my efforts to make a pancake usually ended up in a scrambled egg style mush at the bottom of the pan! But then I tried making fluffy pancakes (like the ones they sell in McDonalds) and ever since then my pancake making skills have improved considerably!
They’re really easy to make and although they’re actually based on a Nigella recipe, I like to let the kids think that I’m the Domestic Goddess who came up with them….
30g (2 tablespoons) butter
225g plain flour
2 heaped teaspoons baking powder
1 teaspoon sugar
pinch of salt
300 ml milk
2 eggs
- Melt the butter and allow to cool a little.
- In another bowl, combine the flour, salt and baking powder.
- Beat the eggs, milk and melted butter together and pour it into the flour mixture.
- Stir until it’s lump free.
- Heat some butter into a frying pan and spoon a big dollop of the mixture into the hot pan.
- When its done underneath turn it over and cook the other side.
They’re great with a handful of blueberries thrown in to the mix just before cooking:
Perfect with homemade chocolate sauce (warmed Nutella mixed with a little milk) and squirty cream:
And if you have a metal cookie cutter, they’re great for making cute shapes with and covering in syrup:
