Nothing too complicated from us here today, we’ve been too busy decorating and building furniture….
In fact today’s recipe is so simple you could probably make it with your eyes shut, it’s a recipe that I use over and over but with a teeny tweak to make a yummy chocolate cake into a winter warmer chocolate cake.
Chocolate Cinnamon Cupcakes
150g butter or margarine
150g sugar
3 eggs
125g self raising flour
35g cocoa powder
2 heaped teaspoons cinnamon
1 tablespoon of milk
A few drops of vanilla essence
- Cream the sugar and the butter together.
- Beat the eggs, milk and vanilla essence into the mixture.
- Gently fold in the flour and the cocoa and the cinnamon.
- Spoon into your cupcake cases and bake at around 200 c for about 15 minutes – you can tell when they’re cooked because you’ll be able to pop a knife in the centre of one of the cakes and it will come out clean.
You can add more or less cinnamon to the cakes depending on how cinnamon-ny you want it to be 😉
I kept the decoration simple – melted chocolate and a minstrel on each one.
Mmmmm.
