Last week I wrote a post about how to ice a cupcake and this week I was planning to make lemon meringue cupcakes as part of my new Cupcake Sunday feature. Except I haven’t had time to sit down since I finished work of Friday afternoon, let alone make cupcakes as it’s was Miss Frugal’s 10th Birthday party today and I’ve been rushing around all weekend trying to get everything sorted.
I do still have a cupcake type post though because Miss Frugal opted for a cupcake cake today instead of a normal shop bought cake. This is the reason for my crash course in cupcake icing last weekend 😉
Consistency is still a bit of a problem for me when it comes to icing so a lovely friend came round yesterday and spent the afternoon baking and icing the cakes for us. You can see from the picture of the finished cake just how well she did as it looks brilliant. I do think a lot of credit should also go to the person who arranged the cupcakes on the stand at the party this morning. Whoever that was did a fantastic job and should be rewarded with a cupcake (*Cough*).
The cakes were made in the same way as the ones I wrote about last week except these ones have little Olly Murs edible paper circles stuck in them (just bought off eBay – search for edible paper cupcake toppers). They’re arranged on a really pretty reusable card cupcake stand which cost me less than £4.00 (again you can buy from eBay easily enough).
Altogether, the whole thing probably cost about the same as a shop bought cake, although now that I have the cake stand, the cost will be even less next time as I won’t be paying out for that. The cake not only looked much prettier than a shop bought cake, it tasted way better.
The best thing about it for me though was the fact that when it came to the end of the party, we just gave everyone a cake to take home with them along with their party bag. So much easier than having to cut a cake in to the right number of portions!
