If you want to make brownies that are going to blow everyone else’s brownies and bakes out of the water then this easy Baileys Brownies recipe is EXACTLY what you need!
Every year at this time, we seem to find ourself buying a bottle of Baileys when we see it on offer telling ourselves we pop it away from Christmas. Every year, we open it not long after buying it and tell ourselves we’ll just have a little bit and then put it back in the Christmas cupboard. And every year, we’ll completely run out before Christmas leaving us either paying full price for a bottle or facing Christmas without Baileys – which isn’t going to happen.
Anyway, this year we’ve bought our bargain bottle (Tesco had them reduced from £20 to £12 for a litre) and we’ve opened it and had a cheeky little drink each. I’ve also made some lovely little chocolate cupcakes with Baileys icing and some amazing Baileys Chocolate Brownies.
I still need to tinker with the Baileys frosting but the Baileys chocolate brownies have turned out perfectly both times I’ve made them so I thought I’d share that recipe with you today…
Amazing Baileys Brownies Recipe

Baileys Brownies Recipe
I love the taste of Baileys Irish Cream almost as much as I love Chocolate Brownies so combining the two in this Baileys Brownie Recipe is a no-brainer!
Ingredients
- 200g butter
- 100g cocoa powder
- 4 large eggs
- 450g sugar
- 1 capful vanilla extract
- 150g self-raising flour
- 80ml Baileys Irish Cream (plus extra to drizzle)
Instructions
- Preheat the oven to 180 c.
- Grease a baking tray and set it to one side while you make your brownie batter.
- Melt the butter in the microwave (less mess but do it in short blasts) and stir the cocoa into the melted butter. TOP TIP - Do not dip your fingers in the bowl at this point, it is not as yummy as it looks yet!
- Whisk the eggs, sugar and vanilla together until they're pale and foamy.
- Stir in the cocoa mixture, Baileys Irish Cream and the flour and give it a good mix together until it's all combined.
- Pour into your baking tin and bake for 35 - 40 minutes or until the top is firm and the inside is still squidgy.
- Leave it to cool slightly and then slice the brownie into squares but don't remove them from the baking tray.
- Drizzle a little Baileys along the lines where you've sliced the brownie into squares so it soaks into the gaps and into the brownies.
- Leave it to cool completely and then remove the squares from the tray.
