This is a bit of a back to front meal plan because I’m going to tell you what we ate last week instead of what we’ll be eating this week…..
Seeing as last week was National Vegetarian Week we decided to have a (mostly) veggie week which was great for me because it gave me a bit of an excuse to cook a few different things as I’m a bit stuck in a rut with our meals at the moment. I’ve got back into the habit of cooking the same old meals which is not only boring but it also makes me feel a bit bleugh about cooking so I’m more tempted to not stick to the week’s plan.
The veggie meals we’ve had have been great, especially for Miss Frugal who eats very little meat now and for Mr Frugal, who thinks a meal isn’t a meal without a bit of meat, I just added some sausages or a chicken breast to his plate here and there to keep him happy 🙂
Monday – Lazy chilli and tomato risotto with crusty bread.
Tuesday – Roasted Mediterranean vegetables with cous cous.
Wednesday – Leftover Roasted Mediterranean vegetable lasagne.
Thursday- Quorn bolognaise.
Friday – Homemade pineapple, mushroom and sweetcorn pizza.
I’m surprised by how much I enjoyed this week’s meals. I don’t know about you but I tend to think of Veggie food as being a little bland but it doesn’t have to be at all. Most meals are easily adapted – you could add chicken or sausages to the risotto, some chicken would be great with the roasted vegetables and some ham on the pizza would have been lovely. I can also see how easy it is to veggify (new word – copywrited ;-)) most of the meals that we eat on a regular basis for a bit of variety.
