Last week was the first week in ages that I shared my meal plan with you on this blog instead of hiding it away on my meal planning blog.
I shared it here for a couple of reasons – the first one is because I’m a little embarrassed by how neglected my poor little meal planning blog is at the moment but the main reason is because this month I wanted to have a BIG focus on our meal planning.
I almost always write a meal plan for the week but lately I haven’t been spending as much time on it as I used to so meal planning of late has consisted of me hurriedly scribbling five meals down on a piece of paper and writing a super quick shopping list to go with it. This not only means that my cupboards and freezer are fuller than they’ve ever been as I’m not really using things up but also that we’re having the same old boring meals that I know the recipes to off the top of my head.
I didn’t do too badly with last week’s menu although I decided to change my mince meal to chilli at the last minute to use up some peppers and red onion I had in which meant that I didn’t make a pie for the following day as I wasn’t sure how well chilli pie would go down here! Note to self: think before changing the plan. 😉
I also changed the homemade flatbreads night to nacho night as I made the most amazing guacamole ever and it gave me the chance to use up the leftover chilli.
