Tomorrow’s the day that I’m going into hospital for my operation – it’s nothing huge and nothing too dramatic but I’m probably not going to feel much like cooking for the next few days. I’ve had lots of offers of help from some very lovely people but I think that my batch cooking has paid off as I’ve just written my meal plan and it’s mostly made up of things in the freezer that just need defrosting and re-heating!
I know I haven’t shared my meal plans on here for a while but today seems like a good one to share with you….
Monday – This week’s only faffy tea is Chicken Souvlaki kebabs with pitta, homemade wedges and salad. I’ve never made it before but someone told me about it the other day so I thought I’d have a go.
Tuesday – It’s Maccydees for tea tonight as I think Mr Frugal will have enough on with getting me home from the hospital and looking after me to be cooking tea as well and even if the kids cook, there’s still cleaning up to be done. We’re need to make Tuesday as easy as we can on us all I think.
Wednesday – I’ve made a lasagne which just needs to be taken out of the freezer on Tuesday night and heated up in the oven. We’ll have this with sweet potato fries and some garlic bread from the freezer hopefully.
Thursday – There’s a cottage pie in the freezer to be heated up for tea on Thursday and as it’s filled with veg and topped with a thick layer of cheesey mash we won’t need anything else preparing to go alongside it although I might ask Mr Frugal to pick up a crusty french stick on his way home from work. I made double of everything when we had cottage pie for tea last week so I could make one for the freezer ready for this week.
Friday – I have a couple of portions of Garlic and Lemon chicken in the freezer that again just need defrosting and cooking for tea on Friday. Miss Frugal is fab at making egg fried rice so we might have that with it or we might have some homemade wedges. The recipe for this is here along with lot of other easy freezer ‘dump’ recipes.
Saturday – I’m going to get Miss Frugal on the case making homemade pizzas for tea on Saturday as she makes lovely ones. I have some shredded chicken in the freezer that we’ll use for toppings along with a few bits that Mr Frugal can pick up on his way home from work.
Sunday – I have a gammon joint in the freezer that I’m going to pop in the slow cooker.
I also have chicken nuggets, fish fingers and oven chips in the freezer just in case. 😉
