See what I did there with the title. 😉 I wanted to make some fancy Easter cupcakes to share with you today – the plan was that would wow you with my cooking prowess but the reality was very different. The cakes didn’t look anything like they were meant to so I thought I’d share a few easy Easter cupcake ideas with you instead.
Now, these ideas aren’t necessarily Pinterest worthy but they taste amazing, they’re easy to make and they have a definite Easter theme so let’s just go with it…
First up, the recipe I use for my cupcakes (they’re all chocolate today) is a simple one that I memorised when I was about eight years old as my lovely Nana used to bake it with me just about every time I visited.
It’s simply 150g sugar creamed with 150g butter or margarine. Then add 3 eggs and a capful of vanilla essence and give it a good beating, Finally, fold in 110g self-raising flour and 40g cocoa powder. I bake this at around 180 c for around 10-15 minutes. The chocolate buttercream recipe I use is this one which I find works brilliantly every time.
