Even though it’s the Summer Holidays and life is a little bit chaotic around here at the minute, you’ll be pleased to know that I’ve been sticking to my meal planning (and my diet). I haven’t been posting it because it’s been a bit samey samey but this week I have a few interesting things planned so I thought I’d share it with you.
Monday – Barbecue chicken using up 4 chicken breasts I got reduced to £1.35 at our local supermarket. I’ve picked up a few bargains recently so I have a nicely stocked freezer at the minute. See below for the recipe.
Tuesday – We’re having friends around for the afternoon and although I’m not making a full on tea, I’m going to make some turkey and apple burgers on Monday night. Then I just have to pop them in the oven and stick them in pitta bread to serve with some crumbly feta cheese if anyone get’s hungry. We’ll have any left for our tea with a nice salad and some bakes potatoes I think. I’ll blog this recipe for you sometime this week as it’s lovely.
Wednesday – Naan bread pizza with salad and potato wedges.
Thursday – Chickpea dahl loaf with sausages. This is my favourite food at the moment and the loaf is free on Slimming World which makes it taste even nicer! I’ll share this one later in the week too.
Friday – Easy freezer tea night – something like fish fingers or chicken nuggets and fries. We might even have fish finger sandwiches. I can’t wait to finish work on Friday as it means I’m off for two weeks – yeay!
Saturday – I’m out on Saturday night so I’ll do something like spaghetti bolognaise in the slow cooker so it’s easy enough for Mr Frugal to serve for them. I have some garlic bread in the freezer that they can have to go with it.
Sunday – I was planning on doing a car boot sale today with Jen but looking at the weather forecast, I don’t think that’s going to happen so we might have a good old Sunday dinner instead. We haven’t had a proper Sunday dinner for ages so it’ll be nice to have some roasties and Yorkshire puds.
Barbecue chicken
This is the easiest recipe ever (do I always say that?) and it’s really tasty (I know, I always say that too).
All you do is wrap a chicken breast in a slice of bacon and bake it in the oven until the chicken is cooked through.
Then top it with some Barbecue sauce and some grated cheese. I used some reduced price Barbecue sauce that I bought for 23p but you could just as easily use any Barbecue sauce (the Heinz one is nice).
Pop it back in the oven until the cheese is all melted and bubbly.
