Last week’s meal plan went OK but I had to nip to the shop twice midweek – once for dog food and the second time for baking supplies for the bake sale at work that I promised I’d cook for. Both times I bought a few extras which meant I ended the week over budget but we’re getting closer to it so I’m not too dissappointed 😉
Here’s this weeks meal plan:
Saturday: Shepherds Pie
Sunday: Sunday Lunch – Chicken, roasties, veg and Yorkshire puddings
Monday: Chicken and mushroom pasta (see below) using up the leftover chicken from Sunday.
Tuesday: Macaroni cheese
Wednesday: Jambalaya or chicken and egg fried rice
Thursday: Sausage pie
Friday: Home made wraps with cajun chicken and home made potato wedges
Chicken and Mushroom Pasta
Although I like to cook as much from scratch as possible, there are times (frequently) when I don’t have time to do this when I come in from work and when I haven’t been organised enough to get the slow cooker on in the morning. I have a few cheats that I use to make super quick teas and this is one of them.
All you need for this is pasta, chicken, ham (optional), sliced mushrooms, 2 tins condensed chicken soup and some chopped garlic. You can cook the sauce in the time it takes to cook the pasta so from start to finish it takes about ten minutes.
Saute some mushrooms.
After a few minutes, add some chopped garlic.
Add some shredded chicken or chopped ham or both 😉 and cook for a few minutes.
Add the two tins of condensed soup straight from the tins and add a further half a can of water.
Mix with cooked pasta and serve.
