I haven’t done a meal plan for the last couple of weeks as we’ve had a couple of trips to London (more details will follow) and the kids have been ill (now there’s a surprise ;-)) but we’re back to normal from tomorrow so I’m hoping to be able to stick to our meal plan for the first time in a couple of weeks. I’d love some new ideas for meals though so if you have any great recipes on your blog, leave a message in the comments and I might steal borrow your idea for my next weeks plan.
Monday: Bacon, egg, sausages, chips and beans with toast (mmmmmm)
Tuesday: Macaroni cheese
Wednesday: Oven baked risotto for grown ups and fish fingers chips and beans for the mini frugals
Thursday: Pasta and meatball bake
Friday: Home made wraps with cajun chicken and home made potato wedges (see below)
Saturday: Home made pizza with choose your own toppings – chicken, ham, pineapple, mushrooms etc
Sunday: Sunday Lunch – Slow roast pork shoulder, roasties, veg and Yorkshire puddings
Homemade wraps
350g of plain flour
1 teaspoon of salt
30ml of olive oil
130ml of warm water
I originally blogged this recipe about 18 months ago but I thought it was worth sharing again as the wraps are so easy to make and at this time of year, wraps are perfect for a quick tea. Lierally, all you need to do is throw all the ingredients together in a mixing bowl and squish it all together until it all sticks together…. then knead it for about five minutes until it makes a nice dough.
Divide your dough into 8 blobs and roll each one out as thin as you can.
Spread a small amount of olive oil around frying pan and cook each wrap on a high heat for about a minute on each side. They will have little brown spots on them when they’re done.
I usually tend to fill the table with little bowls of filling when we have these and let everyone make their own – usually salad, ham, cheese, chicken and coleslaw. They’re also fab for using up leftover chilli by making one with chilli, grated cheese and some sour cream.
