Winter’s really setting in now isn’t it? It’s so cold here tonight so this week’s meal plan is filled with lots of Winter warmers 😉
Monday – Smoked mackerel risotto. I’ve blogged the recipe below for you as this is delicious and something I would never have thought of cooking.
Tuesday – Sausage and bean casserole with mash.
Wednesday – Roast Pork and Yorkshire puddings.
Thursday – Macaroni Cheese.
Friday – Chicken something or other 😉
As some of you might know, I’ve been working with Fish is the Dish recently to try and show you how easy fish can be too cook and how cheaply you can make healthy delicious meals for. Last week we were sent some smoked mackerel by the lovely John at Delish Fish along with a recipe for smoked mackerel risotto and to be perfectly honest, I was a little doubtful about making risotto with mackerel but seeing as the lovely ladies from Fish is the Dish have never steered me wrong I had a go at it last week. We weren’t disappointed and I’ve actually just made it again tonight at the request of Miss Frugal so I thought I’d share my version of the recipe. I say my version because although I love risotto, I can’t be bothered with the faffing about of stirring all the time so mine is an oven baked version.
Smoked Mackerel Risotto
250g Risotto rice
900 ml liquid – I used 200ml white wine and the rest vegetable stock but you can leave the wine out if you like.
3 flaked mackerel fillets – again this is according to how ‘fishy’ you want it to be. I found three to be perfect.
1 chopped onion
A knob of butter
Mixed herbs
There really are no step by step instructions to my version of risotto, other than:
- Pre heat your oven to about 200 c
- Add all the ingredients to a large oven proof dish.
- Cook until all the liquid is absorbed by the rice (around 20 mins – 30 mins).
How simple, cheap and healthy is that? Delicious too.
