After the chaos of last week, we have a nice boring week ahead of us thank goodness.
We’re all feeling a bit bleugh at the minute to be honest. Mr Frugal is awaiting an MRI scan for his vertigo as the specialist says his symptoms are much worse than they would expect and he’s also due to go for an x-ray and an ultrasound as the Dr thinks he also has kidney stones. As well as that, I have a bad back from where I slipped down the stairs yesterday and poor Miss Frugal has been suffering a little lately with her abdominal migraines.
We should just paint a red cross over the door and hibernate until Spring 😉
Anyway, lots of comfort food this week I think….
Sunday – Sunday lunch of slow cooked brisket with potatoes, Yorkshire puddings and veg
Monday – Macaroni cheese
Tuesday – Paella style oven baked risotto. A bit of a mix as I have rice in a storage container that could be paella rice or risotto rice, not that I know what the difference is!
Wednesday – Spaghetti carbonara
Thursday – Egg, chips, beans, bacon and mushrooms
Friday – Home made pizza with sweet potato wedges
Saturday – Slow cooker sausage, bean and chorizo casserole
I received a lovely delivery from Forman and Field this week including some seasonal veggies, some brisket and some Knorr beef gravy pots so we decided to have slow cooked brisket for Sunday lunch yesterday. I’ve never had brisket before but I’ve been told (by Mr Frugal) that it’s one of the cheapest cuts of meat because unless, you cook it slowly, it’s really tough and not very nice.
I popped our joint in the slow cooker yesterday morning about 8am and cooked it on slow in it’s own juices until about 2pm. Then I made up one of the Knorr gravy pots and added that along with some potatoes and left it to cook for another couple of hours.
We had it around 4pm so altogether it had around 8 hours of cooking and it was delicious – the meat was so tender that it just fell apart in your mouth and the flavour from the stock cubes was lovely. Mr Frugal kept making little ‘mmmm’ and ‘aaah’ noises while he was eating and has requested it again next Sunday so it must be nice!
