I’m starting to feel a bit more like myself again after a week of feeling like someone had stamped all over me and sucked out all my energy (drama queen, me?). we didn’t really stick to our meal plan at all last week and we actually ended up having McDonalds on two nights when Mr Frugal was at work as I didn’t have the energy to even open the fridge but that can be our little secret 😉
Anyway, this week I’m determined we’re going to stick to our plan 100% and there will be no McDonalds!
Monday – Macaroni cheese
Tuesday – Beans on toast as we have multi sports club for an hour from 5pm. They usually have something more than their usual fruit or biscuits for supper on Tuesdays. Peanut butter and banana sandwiches are the current favourite.
Wednesday – Not sure whether to make Paella or oven baked chicken risotto. We have the ingredients for either so I’ll decide on the night.
Thursday – Slow cooker chilli
Friday – Chilli and cheese wraps with homemade potato wedges and sour cream – made using yesterdays leftovers.
Saturday – Stir fry. We’re currently really enjoying stir fry’s which are really adaptable and really good for me as I’m on Slimming World at the minute. We usually have it the day after Mr Frugal has had a late night at work (8pm) as I go and pick him up and raid the reduced bit of the veggie section for anything that can go in. I’ve shown you what I do below and I could really do with a few suggestions to pep it up a little bit without adding a high calorie. This one may change slightly as we’re going out Saturday and there will be alcohol involved!
Sunday – Mince and Dumplings.
It’s OK, I’m not going to tell you how to make a stir fry. In fact, even if I wanted to, I couldn’t because there isn’t a right way or a wrong way to making it!
I make stir fry not only to take advantage of some of the cheap veg in the supermarket at the end of the day but also to use up veg that I have left in my fridge at the end of the week. Before I started Slimming World, I used to add one of those little stir fry sachets to give it a bit more flavour but now I don’t want to waste my syns on them so I’m looking for the best ways to flavour a stir fry healthily. That’s where you come in…. How do you flavour yours? Or do you not bother?
