This week my meal plan is super easy seeing as I’m away on holiday. I promised in my last meal plan to share a few recipes with you though so here’s the first one – Turkey and feta burgers.
I’ve start using turkey a lot more in my cooking as it’s so economical and everyone really enjoys it. This is a recipe that I made up initially when some of the kids friends came round and I don’t have much in. They sat and ate it in the garden and all came back for more so it can’t be bad, can it?
To make 8 small burgers you need:
500g turkey mince
Feta cheese – I used about 75g but you can add more or less to taste
Mixed herbs to taste
To serve:
Pitta bread
Some more feta cheese to sprinkle on
Cous cous
As you know I like simple recipes 😉
- For want of a more appropriate technical term, I’m going to use my favourite cooking word – mush. You need to mush up the turkey mince with the crumbled feta cheese and the mixed herbs. I’ve just used dried mixed herbs and a tablespoon worked great for me but as with the feta, you can add more or less.
- Form the mix into 8 burgers, making sure you that you squish the mixture together really firmly so it doesn’t break apart during cooking. You can add egg to bind it if you prefer but I like it without.
- Grill on a medium heat, turning regularly until they’re all cooked through.
- I like to serve them in pitta breads with some more feta cheese crumbled on them and some cous cous on the side.
