I have an amazing treat for you today – Ferrero Rocher cupcakes!
I didn’t set out to make Ferrero Rocher cupcakes but as I was making some chocolate cupcakes for Miss Frugal and her friends, I spied some Ferrero Rochers tucked away in the treat jar and thought I’d have a bit of an experiment. The sad thing is that, because I didn’t know how they would work out, I only made two of these bad boys! I used the rest of the chocolate cake mix to make normal cupcakes but if I’d known how brilliantly these would turn out I would have definitely made more – lots more!
How to make amazing Ferrero Rocher cupcakes
150g Sugar
150g butter
3 eggs
A capful of vanilla essence
110g self-raising flour
40g cocoa
1 Ferrero Rocher for each cake you want to make
Chocolate buttercream to decorate.
- This is the recipe that I learned when I used to cook with my Nana, I memorised it when I was about eight I think and it’s never failed me. Basically, I beat the butter and the sugar together first, add the vanilla and the eggs and then the flour and the cocoa.
- To make the Ferrero Rocher cupcakes, I just spoon a little of the mix into the bottom of the cake case and then set the Ferrero Rocher on top of that. I spoon over some more of the mix and try and almost cover the Ferrero Rocher completely.
- I pop them in the over after that and pop them in the oven at about 180 c until the cake is cooked through (ie. when you can insert a skewer or knife and it comes out clean although insert it at the edge and not through the Ferrero Rocher).
- When the cake is cooled, decorate them with some chocolate buttercream and voila, amazing Ferrero Rocher cupcakes to wow your friends and family with.
