It’s no secret that I prefer easy, simple to prepare recipes when I’m cooking. Mainly because I seem to have very little time spare to spend in the kitchen but also because I’m a little bit lacking in the necessary kitchen skills needed to cope with complicated recipes (by complicated, I mean anything that involves more than two pans ;-)).
This probably explains the love I have for my slow cooker – I get to throw everything in, give it a mix and then leave it for most of the day before serving a delicious home cooked meal.
My recipe for chilli is a great example of how easy it it to prepare a tasty meal in minutes….
Five Ingredient Five Minute Chilli
500g / 600g lean minced beef (depending on your pack size)
2 tins/cartons chopped tomatoes
2 handfuls of chopped onions (I buy the frozen ready chopped version which costs £1 and lasts ages)
1 tin of baked beans (you could use kidney beans but my family hate them)
Either some chopped fresh chilli / some chilli powder / some dried chilli – add as much or as little as you want depending on how spicy you like your chilli.
- This could not be easier to make – add everything to the slow cooker and give it a good stir. If you’re feeling fancy you could add a pinch or two of cumin but it’s not essential so don’t worry about it if you don’t have any.
- Cook on low for 6 hours.
- Done.
Chilli is great for batch cooking and I like to freeze leftovers in various different portion sizes because there’s so much you can do with the leftovers.
