I have just found two bananas hiding at the bottom of my fruit bowl that are looking a but past it. Rather than throwing them out (as I usually would) I decided to see if I could find a way to use up these sad looking specimens….
There are loads of recipes out there on the internet using bananas but the simplest one that I have found was for Fruity Banana Bread.
Ingredients
100g sugar,
75g Margarine,
200g plain flour,
2 teaspoons baking powder,
2 eggs,
2 bananas,
50g dried fruit.
First of all you need to cream the margarine and the sugar. Then mix in the eggs and add the two mashed up bananas. Mix in the flour, baking powder and dried fruit and then pour into a loaf tin or something similar.
Bake in the oven at about 180c for around 40 minutes.
