I wan’t sure about the recipe I had in mind to share with you for today’s #BetterWithLeerdammer sandwich idea but basically, I just served it to Mr Frugal for his tea and he loved it which is high praise from someone who’s quite fussy with his food normally!
Today’s cheese and pesto toasted baguette is the simplest sandwich ever but it tastes delicious! All I did was cut a baguette in half and spread a layer of pesto on the bread before adding two slices of Leerdammer Light. I popped it under the grill until the cheese had melted and then spooned a little more pesto on the top before topping with some rocket. I served it with some rocket and chopped walnuts (with a little pesto stirred through) and then a spoonful of tomato chutney.
I love the way the Leerdammer Light has melted under the grill – it’s kept it shape rather than melting everywhere and making it look messy. 😉
This would be great with soup on a Winter’s day according to Mr Frugal!
