Now that I am back at work and on Slimming world, I need to sort out my lunches. The canteen at work is ridiculously priced and there is nothing else near to where I work so I have spent a fortune in there in the past. I now need to make and take frugal lunches that are yummy, filling, frugal and slimming….
I regularly don’t get away from my desk to eat and as I work with a computer I have been suffering from eye strain and headaches – to the point where I thought I needed glasses. The optician told me that I didn’t need glasses but I needed to take more regular breaks so I am going to do this from now on…
The optician I went to was about twelve and was very cute with floppy blonde hair that kept going up my nose when he got close to examine my eyes. I think Miss Frugal traumatised him by shouting out ‘Mam – I think he’s gonna snog you now’ during my eye examination. I bet he couldn’t get us out of there quick enough!
Anyway back to the frugal, slimming lunch!
On Monday’s menu is Homemade tomato and chicken pasta….
Ingredients:
Leeks
Onion
Garlic
Tinned tomatoes
Chopped chilli (or powdered)
Method
I have started buying ready chopped veg from our local discount freezer shop. I usually have in onions, leeks, carrots and brocolli and I think that they are good value for money as they are only 50p to a £1 for a big bag.
I started my tomato sauce with chopped garlic and a handful each of leeks and onions. I let them scook for about 10 minutes on a lowish heat until they were nice and mushy. As I am making this recipe to eat while I am on slimming world, I didn’t add any fat or oil.
Then I added two tins of chopped tomatoes in herbs and a chopped fresh chilli and let it simmer down for about 20 minutes.
For tomorrow’s lunch, I have added some chopped chicken left over from lunch today and some pasta. I portioned the rest up for other days and I have two portions ready to use now. I am going to add tuna on one day and prawns on another.
