Homemade mini cheddars are on the menu today and seeing as it’s the third time in two weeks that I’ve made them I thought I’d share the recipe with you. 😂
I don’t know about anyone else who’s currently working from home but I’m finding that I’m spending a significant amount of time with my head in the fridge looking for a ‘quick snack’ so I’m trying to be better prepared for snacking. That means more homemade muffins, veggies and homemade homous, lots of fruit and the newest addition to my snack repertoire – these homemade mini cheddars.
I made them originally to use up some cheese that I had in but they were so tasty and enjoyed by me and the kids so much that I’ve made them a couple of time since. I make a batch and portion them up into paper bags so they’re just a grab and go snack for any of us.
Homemade mini cheddars are so much tastier than their shop bought cousins and they feel like much more of a substantial snack even when you’re sticking to a similar portion size that you get in the bags you buy. You can also make them a little chunkier like I do so they’re an even better snack!
I make mine with Red Leicester cheese usually but I’d be happy to make them with pretty much any cheese and I’m also tempted to add in some other flavourings one of these days – chilli and cheese cheddars would be amazing!
These homemade mini cheddars are genuinely Amazing - they're so much nicer than the ones you buy in the shop and I'd bet that they're healthier too! Note: For a less puffy version of a homemade mini cheddar, just use 1 tablespoon of milk and pop the grated cheese in a food processor to make it as fine as you can before you start.Super Tasty Homemade Mini Cheddars....
