A few weeks ago, I made homemade chicken stock in my slow cooker for the first time in ages so I thought I’d share it with you.
It’s not hard to make and the results are amazing so I’m not sure why or when I stopped making it on a more regular basis but now that I’ve made it again and realised how much better food tastes with homemade chicken stock rather than when it’s made with stock cubes then I’m pretty sure I’ll be making it again… and again…
When I cook a chicken for Sunday Lunch I can get enough chicken from it to do that one meal and then one other meal which just needs smaller pieces of chicken, like egg fried rice or risotto. To make two meals out of the one chicken feels like an achievement with four hungry people in the house but making homemade chicken stock stretches it out to one more meal as I can use it as a base for things like soups or as a base for stews.
I find that the easiest way to make homemade chicken stock is in my slow cooker but that’s because I’m lazy I think. I like the way I can just put everything in the pot before I go to bed and come down in the morning to a pot of it ready to be used for whatever I need it for.
How to make homemade chicken stock in your slow cooker
Once you’ve used as much chicken as you’re going to use from your chicken carcass just put it in your slow cooker, whole if you can or if not just roughly break it apart. Season it well and add a couple of carrots, a stick or two of celery and some chopped onion and then cover it all with water. Turn your slow cooker on low and leave it for anywhere between 8 and 10 hours to cook.
When it’s done, you can discard the carcass and the vegetables strain it through a sieve and it’s ready to use. although I prefer to let it cool so I can just skim any fat off that rises to the top before I use it. There’s never much but I’d just rather skim it off with a spoon
This batch was used to make the most delicious half soup/half stew meal which tasted absolutely amazing!
This was made using a bit of a cheat to get the creaminess – I added a tin of chicken soup along with the stock and some chicken and veggies.
