It’s Monday which means that it’s time for #mealplanningMonday again!
On Saturday morning, I woke up ridiculously early and decided to give my Meal Planning Made Easy blog a bit of a makeover and I’m not going to lie, an hour in and I really wished I’d just rolled over and gone back to sleep. 😉 I persevered though and by 8.30am I had a new-look foodie blog with a new logo and design.
I set Meal Planning Made Easy up back in about 2012/2013 but until recently, I’ve struggled with a direction for it as there’s always felt like such a crossover with this blog which has always been my priority. Recently though, I’ve had a good think about what I want to do and I feel like I can do both so that’s what I’ve been doing for the last month or so and I’m really pleased with the way it’s shaping up.
Basically, I’m doing a weekly recipe over there, sharing my meal plan in a much less chatty style to how I share it on here and in between those posts, there are lots of random others like gadget reviews of things I’ve bought for my own kitchen.

Sorry for the #mealplanningMonday interruption, let’s get back to this week’s meal plan now that we’ve got that out of the way!
This week, we’ve got a few new meals mixed in with some of our old family favourites which is something I’m trying to do every week where I can…
Monday – Sea bass and roasted veggies
I want to try and get some more seafood into our meal plans so Monday is going to be the first new ‘fishy’ meal that we’re trying. I’m not sure how I’m going to cook the sea bass yet though so watch this space.
Tuesday – Mexican Chicken Quesadillas
I made a big batch of Mexican Instant Pot Shredded Chicken using Mexican seasoning that I picked up from Costco so this is just going to be a case of defrosting a bag of chicken and making up the quesadillas using some salsa and cheese. I usually make a very basic salad to serve with this – just tomatoes, cucumber and lettuce.
Wednesday -Macaroni cheese
Macaroni cheese is absolutely our favourite family meal so whenever I ask for suggestions on what to cook, this is the meal that everyone asks for.
Thursday – Soup and toasties
For some reason, we were super tired last week and found it really hard going so by the time we got to Thursday we just couldn’t be bothered to cook tea. We had chicken soup and cheese toasties for tea instead of what we had planned and it was amazing. As daft as it sounds, it was one of our most enjoyed meals in ages because it was so simple and so tasty.
Friday -Homemade pizza
As always, homemade pizza is Master Frugal’s meal to prepare although I think after the amount of flour that the kitchen was covered in last week that we might do a cheeky cheats pizza this week using naan bread for the base.
Saturday – Instant Pot chicken and rice
As always Instant Pot chicken and rice is our Saturday night meal although I should probably point out that it’s different every week as we add different flavourings. Saturday just gone for example was cajun spices with chicken and prawn and this Saturday will be Mediterranean style with a spice mix that we bought from the Farmers Market.
Sunday – Roast Dinner
I’m going to see what meat is on offer before I decide on what we’re having for Sunday roast although I think if there’s nothing that stands out then I’ll go for chicken as that always goes down well with my lot.
