This week we’re going full-on Slimming World with our meals as I try and get my head back in the game after a couple of weeks of making excuses for reasons why I can have a day off (or two, or three).
I’ve had such a lot on over the last couple of weeks that it’s been easy to justify in my head that I deserve a treat or that it would just be easier to not stick to the plan for that day but in reality, nothing feels as good as putting on a pair of trousers in the size down from what you normally wear or being able to zip up my pesky raincoat without sucking in. 😉
I want to lose weight for me and I now have the best motivation as I’ve just booked a cheeky little break to New York in December with Miss Frugal which I’m super excited about.
As well as motivating me to get back on the wagon with my diet, it’s also making me think of new ways to save money as New York is always more fun when I have some money to buy treats. That means meal planning is an even bigger priority as I know just how much money I can save when I meal plan each week.
So, with all of that in mind – here’s what we’re eating this week…
Monday
The kids have both asked for macaroni cheese one night this week so looking at the weather outside, today seems like a good day for some good old fashioned comfort food so we’ll be having that for tea tonight.
This has always been one of their favourite meals so I know they’ll be pleased to get home from school to hear that this is on the menu tonight!
Slimming World friendly version – I’m pretty sure there isn’t a way to Slimming World-ify this one whilst keeping the taste I love of this dish and honestly, I’d rather not have it if it’s not as tasty as usual! Instead, I have a Slimming Lasagne which I’ll serve with a big salad and a jacket potato or if I really can’t be bothered, I’ll just do some avocado on toast and syn the avocado.
Tuesday
We’ll be having homemade pizza tonight as I know that Master Frugal enjoys making the pizza dough for us all and he’s home from school early for some blood tests so getting him busy in the kitchen will take his mind off things.
Slimming World friendly version – I generally make a Slimming World Pizza on a wrap which tastes amazing! I’ll probably serve it with some sweet potato fries or some Dirty Slimming World style fries as I often get hungry later on if I just have the pizza.
Wednesday
I think we’ll have burgers and wedges for tea tonight!
I’ll make some normal burgers for me and Mr Frugal using my little burger press and some lean mince and I’m pretty sure I have some chicken burgers in the freezer for the kids. I might even have a go at making some sort of BBQ bean concoction to go with it as I’ve been meaning to have a go at this for a while.
Slimming World friendly version – This is perfect for Slimming World if I use a HeB bread bun to serve my burger in or even better, I might just serve mine with some cheese (HeA) on top with no bun and lots of extra salad.
Thursday
I’m planning a Slimming World style beef casserole today in the slow cooker. I have lean casserole beef, onion, leek, carrots, sweet potato and a Colman’s beef casserole sachet so I can hopefully just pop it all in the slow cooker before I leave for work and then by the time I get home, there’ll be a delicious tea waiting for me to serve up.
Slimming World friendly version – The Colman’s sachet is 6.5 syns so I’ll count three syns as I’m only making enough for Miss Frugal and me tonight as
Friday
I have a feeling that by the time Friday comes around, we’re all going to be pretty wiped out. It’s Miss Frugal’s last week of exams before leaving school, I have a pretty packed week at work and Master Frugal is having some medical tests this week so knowing how we feel on Monday, I can well imagine how we’re going to feel on Friday.
I feel like we’re going to need something quick and easy but also something that’s going to get us all around the table for a family catch up. I think I’ll get some pulled chicken out of the freezer and make some sort of chicken fajita pasta bake.
Slimming World friendly version – I’m just going to be making this up as I go along so I’ll just make sure that it’s syn free and delicious!
Saturday
Obviously, the fact that it’s Saturday night means that Instant Pot chicken and rice is on the menu!
I’ve got some chicken and prawns in the freezer so I’ll be using them and bulking out with lots of red onion, green pepper and maybe even a little sweetcorn (although that’s only if I’m feeling adventurous).
Slimming World friendly version – This is another one that is completely Syn free so we can all enjoy it exactly as it is.
Sunday
I know I’m really predictable as I did exactly the same last week but I’m planning to cook a chicken in our slow cooker today and I’ll use the chicken carcass to make some homemade chicken stock overnight on Sunday night.
I’ll use the chicken stock the following day to make some sort of risotto maybe with any leftover chicken bits.
Slimming World friendly version – This is ideal for me as I’ll just prepare a pile of veg to go with it.
That’s our week of evening meals all planned!
Next weekend, I’m going to try and do some batch cooking which should be fun. 😉
