This week’s meal plan is super-frugal, or at least it is to us.
I’m not going to lie, this last month or so has been ridiculous for unexpected expenses so we’re really trying hard to cut our costs in any way possible this month and one way we’re doing that is with our meal plans.
I worked out this week’s meal plan, as you always should, based on what we had in to use up and I didn’t add in any meals that we didn’t have at least one ingredient in the house already. I thought this week, I’d share the logic in why I chose the meals I did by telling you what I already had in and what I need to add to my shopping list.
Monday – Macaroni cheese
Pasta, flour and milk are pretty much storecupboard ingredients so we’ll have those in which means I’ll only have to add cheese to our shopping list. I might add in broccoli as that always goes down well and even some shredded gammon if we have some in the freezer but otherwise, plain old mac and cheese it is!
Tuesday – Fajitas
I have plenty of chicken and sliced red onion in the freezer so just some peppers and wraps need to be added to the shopping list for this one.
Wednesday – Homemade pizza
I’m thinking that we could get Master Frugal making the base for this and use some leftover fajita mix as a topping. We rarely use much cheese on pizza so potentially we could use what’s left of Monday’s cheese.
Thursday – Midweek roast
I always have vegetables and chicken in the freezer so a batch of Yorkshire puds and some mash will make a perfect mid-week roast with only mash needing adding to the shopping list.
Friday – Tuna pasta bake
I have some tins of tuna and tinned tomatoes in the cupboard and I always have plenty of pasta so this one is a super cheap option with nothing needed to buy to make it.
Saturday – Instant Pot chicken and rice
You probably know by now that Instant Pot chicken and rice is our standard Saturday night meal these days and we should still have chicken in the freezer so we’ll just need to add a few little extras on the shopping list for this one.
Sunday – Roast Dinner
I’m going to see what meat is on offer before I decide on what we’re having for Sunday roast. I’ve got plenty of veg in the freezer and Yorkshire puds are made from storecupboard ingredients so I’ll just need some potatoes here I think.
As you can see, I have 7 days worth of meals for very few additions to my shopping list.
