This week is going to be one of those week’s where there simply aren’t enough hours in the day!
First up, let me share this week’s meal plan with you:
Monday
Today, I’m going to be reheating the amazing Goulash that I made yesterday using a recipe from the Pinch of Nom cookbook. Unfortunately, I can’t share the recipe as it’s obviously not mine but if you do get chance to get hold of the cookbook then you’ll find it on page 140 and I guarantee you won’t regret it!
Just in case you were wondering why I was reheating it, I made it yesterday as I had plenty of time to spend pottering about the kitchen and I always find that things like this taste even nicer when they’re reheated – the flavours just seem stronger if that makes sense.
Slimming World friendly version – No need to do anything any different on this one as it’s Slimming World friendly recipe. I don’t think (in fact I know) that Master Frugal will enjoy this but I have some Sunday Dinner leftovers that I’m going to plate up for him.
Tuesday
I was planning on getting Miss Frugal to make her homemade fajitas tonight but she reminded me that she has two exams on Wednesday so she tells me that she’ll be lucky if she breaks from revising to actually eat a proper tea, never mind actually cook it.
Obviously, I won’t let her go without tea but she says she has a lot of studying to get through so a couple of times over the last few weeks I’ve made her a big smoothie and taken her up something like nachos to snack on. She’s working so hard on her exams and I really think I’m the only parent who’s asked their child to revise less for their GCSE’s. 😉
For the rest of us, I think I’m going to make chicken shawarma and serve it in wraps with salad and maybe some sweet potato fries on the side. Shawarma is a new thing for me which I only discovered when some friends at work got it from a local takeaway for their lunch – I thought I’d see if I could replicate it and although it’s not the same exactly (mine lacks grease and calories) I think it’s pretty close. I’ll share my recipe for this in the next couple of weeks so keep your eyes peeled.
Slimming World friendly version – Again, this is Slimming World friendly as it is as I use a seasoning that’s suitable. I have a wholemeal wrap with it which is my HeB for the day and have a huge pile of salad on the side.
Wednesday
Back to the slow cooker for today’s meal which is going to be spaghetti bolognaise. I love that Mr Frugal can add everything into the slow cooker before he leaves for work and it will be ready for us when we get in from work and school. He’s on a late shift on Wednesday so I can leave it on keep warm and it will be quick and easy to serve when he gets in.
I’ll probably do mine and the kids with spaghetti at tea time and pop a jacket potato in the oven for him to have when he gets in at 8 pm. I might even just make some garlic bread if I get chance and he can just have a bowl of this with some garlic bread to dunk in.
Slimming World friendly version – This is perfect for Slimming World although I might need to add in some extra veggies to make sure I’m getting enough in there. If I have some courgette spaghetti in then I’ll use that for me rather than pasta spaghetti as I’m loving that lately.
Thursday
I’m hopeful that we’ll be having homemade moussaka on Thursday as that’s what Master Frugal is cooking in his food tech class that day but just in case, I think I might do a batch of slow cooker jacket potatoes during the day and I can either serve them with the moussaka or if that doesn’t go according to plan then I’ll serve them with whatever random things we have in to use up as toppings. I have cheese and beans and will probably have a little bit of bolognaise leftover from Wednesday.
I also love egg mayo on jacket potatoes so I might make a batch of that too.
Slimming World friendly version – These will be ideal for me on Slimming World as we’ll have a pile of salad with it. The cheese (if I have any) will be my HeA and if I go for the egg mayo then I’ll happily count syns for that as I know I’ll enjoy it.
Friday
I think we’ll have a bit of a mid-week roast on Thursday and I’ll pop some brisket and potatoes in the slow cooker before I head out to work. I can then get one of the kids to cook some veg to go with it when I get in from work so it’s ready to go not long after I’m in.
Slimming World friendly version – As long as I get rid of any fatty bits and don’t do Yorkshire puds then this is Slimming World friendly.
Saturday
I finally got around to sharing my Instant Pot chicken and rice recipe last week so you can finally see what I’m raving about every time I mention this wonder dish!
This is one of those recipes that I know is going to be a family recipe – I’ve already taught Miss Frugal to make it and her brother is next on my list.
Slimming World friendly version – This is another one that is completely Syn free so we can all enjoy it exactly as it is.
Sunday
I’m planning to cook a chicken in our slow cooker today and follow that up with some homemade chicken stock overnight on Sunday night.
Slow cooker chicken is so easy to prepare and the results are delicious!
Slimming World friendly version – This is ideal for me as I’ll just prepare a pile of veg to go with it.
That’s our week of evening meals all planned!
Next weekend, I’m going to try and do some batch cooking which should be fun. 😉
