As much as I love my family, it drives me mad when, no matter how many times I tell them, when they use the last of something the box does not go back in the cupboard! I’ve lost count of the times that I’ve got something out of the cupboard or the fridge only to find that the box is empty!
It drives me loopy, especially when I’ve already melted some chocolate ready to make cornflake cakes and find that the big box of cornflakes in the cupboard is empty and there’s only about a handful left in the rice crispies box!
I had nothing else in that would work so I was torn between abandoning the crispy cakes and making chocolate dipped strawberries just for me or venturing out into the rain to get some more. Just as I was reaching for the strawberries, Master Frugal appeared and suggested that I use some popcorn instead.
I wasn’t sure to be honest but since I’d been planning to use the strawberries to try and make some prosecco ice lollies, I thought I’d give it a go.
How we made our popcorn crispy cakes
So, as far as the recipe for popcorn crispy cakes, I basically melted a bar of cheap Asda chocolate (about 35p for a 100g bar) and added in the handful of rice crispies that I did have along with a small bag of popcorn (the ones you get in a multipack – six bags for a pound) and Miss Frugal mixed it all together and spooned it into cake cases.
These yummy popcorn crispy cakes look just like a crispy cake and taste delicious so we’ll definitely be making them again – now I’m wondering what else would make a good crispy cake!
