As part of my frugal reset, I’ve been sharing our weekly meal plans on here again and I’ll be honest, I’ve really enjoyed the old school blog posts again along with the accountability that I get from sharing something with you all!
Meal planning makes me feel more organised and saves me time and money, every single week.
Whenever anyone used to ask me for my biggest money saving tip, it was always meal planning. It’s a way to save money pretty much as soon as you start doing it and gives you the opportunity to flex your budget up and down depending on how much money you have available.
I definitely lost my way with meal planning when I moved in with my partner and it took me a while to get back to it. In the time that I wasn’t planning our meals, we spent way more money on our food and way more time on deciding what to eat than we needed to.
As always, I share the basis of what our meals will be for the week, what I don’t do is share all the extra bits that I serve along with each meal. There’s always plenty of salads and vegetables as we’re trying to be much more health conscious at the moment with more healthy food and more exercise happening for us all.
Monday – Freezer Tea
I haven’t decided yet what we’re having for tea tomorrow night but I do know that it will be something from the freezer. We have a pretty well stocked freezer thanks to some batch cooking, some reduced price bargains and monthly trips to our favourite freezer shop, Farm Foods.
Tuesday – Hunters Chicken
I’m going to make some hunters chicken with some chicken from the freezer and some bacon that we bought from the reduced section yesterday with a few days on it before the expiry date. I have a jar of barbecue sauce in the cupboard which I’m going to use so it should be a super quick and easy meal to cook after work.
Wednesday – Chicken skewers with barbecue rice
Last week’s air fryer chicken skewers went well so I’m going to make them again and serve them with barbecue rice instead of spicy rice – mainly because I over-spiced last week and I think I’ve traumatised everyone who ate it.
Thursday – Spaghetti Bolognaise
We have all the kids for tea on Thursday and one meal that I know everyone will love is slow cooker spaghetti bolognaise. It’s super simple to make and takes barely any effort to serve which is what I want as the last thing I need is to be faffing around in the kitchen when the kids are here.
The effort, if you can call it that, is all going to be on the morning when I throw everything into the slow cooker. When it’s time to serve, I just need to cook a load of spaghetti and I can serve it up in minutes.
Friday – Day Out
We’re going out for the day today so we’ll be packing a picnic for lunch and then grabbing something while we’re out for tea. If we finish earlier than we think then we’ll have a freezer tea at home to save a bit of money but it’s unlikely.
Saturday – Slow cooker pulled pork
I made slow cooker pulled pork for the first time in ages a couple of weeks ago and it went down very well! It was the first time I’d made it for my partner (who I hate calling my partner so we need to think of a better name. ) and he loved it.
I’ll serve his in a baguette with some salad and chips and mine will be on a jacket potato as potatoes spike my bloods more than bread does.
Sunday – Corned Beef Hash
I used to make corned beef hash with more potatoes in it than anything else to really bulk it out cheaply but I need to be careful with carbs now so my ingredients have changed a little bit. I still use potatoes but in smaller amounts and I add in some carrots and peas which are lower carb vegetables.
It still tastes amazing and the fact that I don’t exclude potatoes completely means that I don’t feel like I’m missing out.
And that’s what we’ll be eating this week!
